If you have linked Google Calendar, new calendars saved in your Google Account need to be created in Google Calendar using a web browser on your computer. Once you create the calendar you want on the Google Calendar site, it syncs and appears in this app.
Calendar colors, including those of Google Calendar calendars, can be changed from "Calendar Settings" → "Manage Calendars" in the settings screen.
